CHY-MAX is Genetically Engineered bovine chymosin produced by the biotech company Chr. Hansen A/S. CHY-MAX is produced by fermentation of the fungus Aspergillus niger. Bovine chymosin is an enzyme that causes milk to curdle. Being a non animal derived product, CHY-MAX is suitable for consumption by vegetarians, as well as for production of cheese certified Kosher or Halal.
