The enzyme steryl-β-glucosidase (EC 3.2.1.104) catalyzes the following chemical reaction:
- cholesteryl-β-D-glucoside + H2O [math]\displaystyle{ \rightleftharpoons }[/math] D-glucose + cholesterol
It belongs to the family of hydrolases, specifically those glycosidases that hydrolyse O- and S-glycosyl compounds. The systematic name is cholesteryl-β-D-glucoside glucohydrolase.
